This blender drink is light, fragrant and easy to strain or leave pulpy. Honey rounds out underripe melon, while lime and mint keep the cucumber base tasting crisp rather than watery.
Ingredients
- 3 cups ripe honeydew melon, cubed
- 1 small cucumber, chopped
- 3 cups cold water
- Juice of 2 limes
- 8 mint leaves
- 1 tablespoon honey, optional
- 1 cup ice
Method
- 1. Add melon, cucumber, water, lime juice, mint and optional honey to a blender.
- 2. Blend until fully liquid, about 45 seconds. Taste and add more lime or honey if needed.
- 3. Strain through a fine sieve for a clear drink, or leave unstrained. Serve over ice.

Good to know
Chill the melon and cucumber before blending so the agua fresca is ready to pour without relying on lots of ice.
Questions, answered.
How long does agua fresca keep?
Refrigerate it in a covered pitcher for up to two days and stir before serving. The flavor is brightest on the first day.
Should I strain it?
Straining gives a polished, juice-like drink; leaving it pulpy keeps more texture. Both are delicious.
