This cucumber green smoothie is clean, cool and easy to drink. Crisp apple, fresh mint and lime give the handful of spinach enough shape to feel like a proper recipe rather than a dare.
Ingredients
- 1 small cucumber, roughly chopped
- 1 packed cup baby spinach
- 1 green apple, cored and quartered
- Juice of 1 lime
- 8 fresh mint leaves
- ¾ cup cold water
- 4 ice cubes
Method
- 1. Put the cucumber, spinach, apple, lime juice, mint and cold water into a blender.
- 2. Blend on high until smooth and velvety, about 45 seconds. Add the ice and blend again until cold.
- 3. Taste and add another squeeze of lime if it needs lifting. Pour into two small glasses and serve straight away.

Substitutions
- Replace the green apple with a pear for a softer, sweeter flavor.
- Use parsley or basil if you do not have mint, or leave the herbs out.
- Coconut water can replace the cold water for a slightly rounder drink.
Good to know
Keep the peel on the apple and cucumber for more color and less prep. A tart apple gives the nicest contrast.
Questions, answered.
Can I prepare this green smoothie in advance?
For the freshest flavor, blend and drink it right away. If needed, refrigerate it in a sealed jar for up to 24 hours and shake before serving.
Do I need to peel the cucumber?
No. Scrub it well and keep the peel on for less prep and more color, unless the skin is especially thick or bitter.
