This warm ginger lime drink is sharp, aromatic and comforting without making a grand promise. Fresh ginger, lime peel and a little honey make a small cup for the space between one thing and the next.
Ingredients
- 2 cups water
- 1½-inch piece fresh ginger, thinly sliced
- Peel of 1 lime, in wide strips
- Juice of 1 lime
- 1 teaspoon honey or maple syrup, optional
- A pinch of sea salt
Method
- 1. Bring the water, ginger and lime peel to a gentle simmer in a small saucepan.
- 2. Turn off the heat, cover and steep for 8 minutes.
- 3. Strain into two cups. Add the lime juice, a pinch of salt and honey or maple syrup if you want a softer edge.

Substitutions
- Use maple syrup instead of honey for a vegan version, or leave the sweetener out.
- A strip of lemon peel can stand in for lime peel when that is what you have.
- Add a cinnamon stick while the ginger steeps for a warmer, spiced variation.
Good to know
The tonic keeps in a covered jar in the refrigerator for two days. Rewarm gently; do not boil after adding the lime juice.
