Pale green pear parsley smoothie with lime wedges and fresh parsley

This is a cool, lightly sweet smoothie with a fresh herbal finish. Ripe pear smooths the edges of parsley and cucumber, while silken tofu adds a silky texture without taking over.

Ingredients

  • 1 ripe pear, cored and chopped
  • ½ cup silken tofu
  • ½ small cucumber, chopped
  • ½ packed cup flat-leaf parsley
  • Juice of 1 lime
  • ½ cup cold water
  • 1 cup ice
  • 1 teaspoon honey, optional

Method

  1. 1. Add the pear, tofu, cucumber, parsley, lime juice and water to a blender.
  2. 2. Blend until the parsley is fully broken down and the mixture is smooth.
  3. 3. Add the ice and optional honey, blend until cold, and serve.

Substitutions

  • Use soft avocado instead of tofu for a richer texture.
  • Swap cilantro or mint for parsley.
  • Use a small apple in place of the pear.

Good to know

Taste the pear before blending; a very ripe pear may mean you can skip the honey entirely.

Questions, answered.

What kind of pear works best?

A ripe Bartlett or Anjou pear blends easily and brings enough sweetness to balance the parsley.

Can I make this without tofu?

Yes. Use ½ cup plain yogurt or ¼ avocado for similar creaminess.
