Substitutions
- Use dairy milk or unsweetened soy milk instead of oat milk.
- Replace maple syrup with a soft date or leave it out for a less sweet smoothie.
- Use pumpkin pie spice in place of the individual spices.
Good to know
Freeze ripe banana slices flat on a tray first, then transfer them to a bag so they do not clump together.
Questions, answered.
Can I use fresh pumpkin?
Yes. Roast or steam peeled pumpkin until tender, cool it completely, and measure ¾ cup before blending.
Can I make this smoothie ahead?
Blend it up to one day ahead and refrigerate in a sealed jar. Shake well; the oats will make it thicker as it rests.
